BRAZILIAN STYLE BEANS.





Beans and rice are the Brazilian traditional everyday meal. Beans and rice are known as food of perfect combination because nutritiously one complements the other. We like our beans well seasoned, full of flavor and full of meat. In Brazil we use a lot of different cured meats  Here in the US I use smoked and spicy meats as well as lean barbecued  meat. I just love it! and as a good Brazilian I have to have it at least twice a week.

Ingredients:
2 lb pinto beans
1 tbs canola oil
1 oz bacon chopped
1 spicy sausage without casing sliced 1/2 inch thick
1 lb pork country ribs BBQ in cubs  (you can use any BBQ meat)
6 smoked baby backs ribs cut in pairs (you can substitute the smoked ribs for ham hock)
2 quarts of beef stock or 2 beef bouillon dissolved into 2 quarts of water
1 green bell pepper diced
1 big onion diced
6 cloves of garlic smashed
1/2 can of organic diced tomatoes  or 2 diced tomatoes
1/2 cup cilantro chopped
1/2 cup green onion chopped
2 tbs Worcestershire sauce
2 tbs soy sauce (low sodium)
1/2 tbs powder bay leaves or 3 bay leaves
1/2 tbs cumin
1/2 tbs  dried oregano
1/2 tbs freshly grounded  black pepper
2 tbs tomato paste.

Into a bowl place the beans and cover with water overnight or at least 2 hours. (sort the beans for impurities before soak  them) . When is time to cook, drain the water out.
Into a pressure cooker pot add canola oil and fry bacon until crispy. Remove from pot and reserve it.
To the same pot add sausage and fry until golden brown. Remove from pot and reserve it.
To the same pot add onions and green bell peppers and 1/2 tsp of salt and saute them until soft. Add garlic and cook for 30-40 seconds. Add bay leaves, cumin, oregano, black pepper, tomato, tomato paste, cilantro, green onions,Worcestershire sauce, soy sauce.
Add BBQ meat, add sausage and bacon back. Mix everything together. Add 3 pairs of ribs.
Add beans and mix them all together with a wood spoon. Add stock or water+ bullion.
Close the pot and secure the pressure regulator.Heat until it starts to sizzling, then reduce the heat to medium and cook it for 25 minutes. Before you open it, make sure you release the pressure from the pot accordingly to the manufacturer's instructions.
Only remove the lid after all pressure is gone.
Fish the ribs, remove the bones, shred the meat, and transfer it back to the pot.
Adjust salt if needed. Serve with white rice, farinha (toasted manioc flour if you have), and tomato salad.   
If you don't have a pressure cooker don't worry, you can cook on a good deep pot. It only will take more time to cook. Cook until the beans are soft.
