- 8 Roman tomatoes
- 6 cloves of garlic chopped
- 1 tsp Italian herbs (oregano, basil, marjoram....)
- 2 tbs sugar
- 6 tbs extra virgin olive oil
- 2 tbs balsamic vinegar
- A pinch of salt
- Crushed black pepper
Cut the tomatoes lengthwise, spoon the seeds and the juices. You can either discard the seeds and juices, or reserve to use later in a pasta salad.
On this recipe we are to use the tomatoes clean of the seeds and juices.
In a bowl mix olive oil, balsamic vinegar, sugar, herbs, salt, pepper, and garlic.
Add the clean tomatoes and toss to coat all of them well.
Spray a baking sheet with cooking oil and place all the tomatoes with its cavities up, fill the tomatoes with the sauce.
Pre heat the oven to 325°F and bake it for 1 and 1/2 hour.
If you are to use them on salad, use the juices of the baking process as dressing.
I like to remove the skin before to serve it.

Dicas da chef: Aproveite os sucos da assadeira para colocar na salada.
Na hora de servir, eu gosto de tirar a pele do tomate.
